Ingredients That You’ll Need
First, you’ll need to buy a whole chicken. You’ll also need three tablespoons of melted Paleo fat for cooking – choose your favorite. In addition, you’ll need three tablespoons of rosemary, diced fine, as well as couple of onions and four carrots. Fresh herbs are preferable – however, dried should be okay if that’s all that you have.
Also, you’ll need to purchase a couple of bell peppers, which you should then wash and chop up. As well, you should buy a couple of lemons and cut them both in halves. Have salt and pepper standing by and use it according to your own tastes.
To prepare the Paleo roast chicken, pre-heat the oven to four hundred degrees. Then, put the chicken on a board, breast down. Take away the backbone, lengthwise, with a pair of kitchen scissors and set it aside. Flip the chicken around and then flatten it with your palms. Next, place melted fat and spices in a mid-sized bowl. Then, rub the bird with two-thirds of the mixture and two tablespoons of the spice. Add salt and pepper if you want to.
After this, add foil to your baking pan and put the chicken on top. Place veggies around the bird if you want to roast them while it cooks. Add the rest of the fat and spices to your veggies. Cook the bird for 60 minutes or until done (it will depend on weight). Once it’s out of the oven, add squeezed lemon juice and serve.
