I like soup for dinner. Soups are filling, warming, and tasty – and they’re easy to make too. That means that they are perfect for when you get home from work, feeling tired and hungry, and need a meal that’s ready in minutes.
Soups made from lots of veggies provide an easy way to load up on healthy nutrients in one single, easy to eat meal. After salads, soups are probably the most nutritionally complete meals around.
But how to do you make a raw soup? And does raw soup taste nice?
Raw soups are basically thick smoothies made with vegetables. They taste amazing and are every bit as good for you as warm, cooked soups. As for eating a soup that’s cold – yes, that does take a bit of getting used to, but cold soups are often very refreshing. However, this recipe for raw corn chowder comes out warm. Blitzing it in the blender warms it up without cooking the ingredients.

Ingredients
- 1 cup of fresh corn kernels
- ¼ cup raw cashews
- ¾ cup filtered water
- ½ cup of fresh corn kernels (kept in reserve)
- Salt and pepper to taste
Instructions
1. Pull the ingredients, except the ½ cup of corn kernels kept in reserve, into your blender (the blender I use here). Blitz on high until the mixture becomes very smooth. Blend for a little longer as this will warm your chowder up.
2. Pour the blended chowder into a bowl and add the remaining corn kernels. Season as required and serve immediately, while still warm.
