    Spinach Casserole with Bacon and Mushrooms

    If you’re looking for healthy diet recipes which are Paleo-diet friendly, you’ll benefit from discovering this filling – and delicious – supper casserole. Easy to make and very satisfying, it’s designed to please solo diners or groups. Since you may place all ingredients in one dish, you’ll find that preparation is a snap. Also, the addition of bacon in this recipe adds savory flavor which is truly irresistible.

    In terms of low fat diet recipes, this one is pretty impressive, despite the bacon. The rest of the ingredients are definitely low in fat. So, this casserole recipe should conform to your Paleo diet weight loss goals, as long as you control your portions.

    Ingredients That You’ll Need

    To begin, you’ll need to buy one and a half pounds of smoked bacon, which you should divide into medium-sized rashers. Next, you’ll need to de-stem three large handfuls of spinach and slice up a pound of button mushrooms. In addition, you should chop up a large onion and mince a couple of cloves of garlic. As a binder, you’ll need a couple of teaspoons of butter. You may also wish to add pepper and salt.

    To prepare, place a casserole dish on the stove and add bacon – cook it thoroughly and leave it in the dish, along with its rendered fat. Then, add the onions. Sauté the onions until they are softened – usually, this takes about five minutes. Next, add your garlic and cook it for one minute.

    After this, add the mushrooms and sauté them for about eight minutes, until they are softened. Then, add the butter and spinach and cover the pan or pot – let the combination of ingredients cook for about five minutes. You’ll need to stir the contents of your pan or pot now and then during this step.

    The casserole will ready after this step – add salt and pepper if desired.

    As you can see, this is a quick and easy Paleo recipe and it’s designed to offer plenty of nutrition. Spinach has lots of iron, which is energizing, and mushrooms offer a lot of satiety, which means that they’ll help you to feel full for longer.
