When you go gluten-free, the first thing you tend to miss is bread. After all, without bread, how can you make your lunchtime sandwich?! Yes, you can have soup or salad for lunch, but that’s not always convenient, especially if, like me, you need to eat on the go or while working at your desk.
That’s why, when I found this particular recipe, I was so happy! It’s the perfect gluten-free lunch for busy people as it takes no more than a few minutes to make and you can quickly wrap it up to take with you wherever you go. It’s also tasty and very healthy. Try it, and I know you’ll love it too!
Ingredients
- 4 leaves Romaine lettuce, rinsed and drained
- 1 medium raw Roma tomato, sliced
- ½ medium red bell pepper, sliced
- 10 spears cooked asparagus
- ½ tablespoon mayonnaise
- ½ cup cooked brown rice
- ½ lb. turkey meat, cooked and sliced
Directions
Chop off the ends of the romaine leaves, wash them, and pat them dry. Spread the mayonnaise on the center of each leaf. Put a spoonful of rice over the mayo. Place the slices of turkey on each pile of rice. Lay the slices of red pepper, tomato, and the asparagus spears across each leaf. Roll them up to form a cylinder. Don’t worry if the asparagus spears stick out. Slice each wrap in half and then serve or cover them in Clingfilm and refrigerate for later.
