Learn How to Make a Paleo-friendly Breakfast Frittata
To begin, you’ll need to gather some ingredients, including one tablespoon of coconut oil, half a cup of red pepper (diced), one-third of a cup of onions (chopped), three slices of cooked bacon, a couple of cups of chopped Kale (de-stem and rinse) and eight big eggs. In addition, you’ll need half a cup of almond milk (coconut milk will also work). Use salt and pepper in order to season as desired.
To prepare the Frittata, pre-heat your oven until it’s at 350. Then, whisk your eggs and milk in a large bowl. If you want to, throw in a bit of salt and pepper. Once you’ve done so, set the dish aside. Next, heat up the coconut oil until it’s at a medium temperature and then toss in your onions and red peppers. Sauté the mixture for three minutes until the onions lose their transparency. Next, add the Kale and sauté it until it’s wilted. This should take about five minutes.
Now, it’s time to cook the Frittata. Add eggs and bacon to the fry-pan and then cook it for about five minutes. The bottom and edges of the Frittata should be fairly firm after five minutes. After this, you should place your Frittata in the oven and cook it for ten to fifteen minutes. Then, enjoy!
