Most ice creams are made from diary. Not that there is anything wrong with dairy but some poor souls have issues with lactose and that means they get upset stomachs if they eat anything with milk in it. If that’s you, you either a) eat dairy ice cream and suffer or b) miss out on ice cream altogether.
With this creamy ice cream dessert, you don’t have to do either as it’s completely lactose free being made from coconut milk instead.
It tastes so good that your dairy eating friends may end up being converted from eating regular ice cream to this delicious dairy-free alternative!
Ingredients – serves 3/makes 1 ½ pints
½ cup canned coconut milk
¼ cup unsweetened flaked coconut
¼ cup maple syrup – use agave syrup if you want a lower sugar option
½ teaspoon vanilla
2 frozen bananas
Method
1. Put all the ingredients in a blender and blend until thick and creamy. The model I use and the best blenders under $200 here.
2. Pour the mixture into a plastic, sealable tub and freeze at least four hours.
3. Scoop into balls and roll in a little more flaked coconut
4. Serve with warm chocolate syrup for a real treat!
