I like sweet desserts but, sometimes, it’s nice to have something a little sharper or more tart – especially after a big meal. The sharp, tart taste provides a nice cleaning of the palate before settling down to enjoy a good coffee!
This recipe is another easy one that even a complete kitchen beginner could make. Low in fat but high in taste, this is a very healthy dessert indeed!
Ingredients – serves 2/makes 1 pint
2 cup frozen tart cherries
½ cup plain low fat Greek yogurt
1 tsp pure vanilla extract
½ cup plain low fat Greek yogurt (not a misprint – you’ll see why in a minute!)
1 tablespoon honey or agave syrup
Method
1. Blend together cherries, ½ cup Greek yogurt and vanilla until smooth. The blenders I recommend.
2. Pour the mixture into a plastic, sealable box.
3. Mix the remaining ½ cup Greek yogurt and honey together and drizzle over the rest of the mixture. Gently swirl the mixtures together.
4. Freeze for at least 4 hours.
