Kids love cookies. As an after school treat or in a packed lunch, cookies are hard to beat. Most commercially made cookies are high in gluten and other processed nastiness – such as trans fat. However, this recipe is much better because it uses only natural ingredients.
Of course, even though they are made from natural ingredients, no kid should eat a lot of cookies. However, I believe that the occasional sweet treat is acceptable and will help teach children about nutritional responsibility. Also, after tasting these delicious cookies, they won’t want any of those store-bought cookies anyway!
This recipe makes a large batch of cookies so make sure you store them in an airtight container. Better still, share them with your friends and family!
Ingredients
- 2 cups pure rice bran
- 3 cups gluten-free flour – I use this one which is available from Amazon.com
- 1 tablespoon gluten-free baking powder
- 2 medium eggs
- 3 cups brown sugar
- 1 cup Organic Unsalted Butter
- 2 teaspoons pure vanilla extract
- 1 bag M&Ms
Method
Preheat your oven to 360 degrees.
Mix the rice bran and rice flour together and the baking powder. In a new bowl cream the brown sugar and the butter together. In another bowl, beat the eggs and add the vanilla extract then mix with the sugar and butter mixture.
Combine all the ingredients in a bowl with the rice bran and rice flour. Mix until smooth and free from lumps.
Spoon the mixture onto a greased baking tray, making 36 small cookies. Place several M&Ms onto each cookie, pushing them down into the dough.
Cook for about 10-15 minutes until brown.
