Guacamole is one of my favorite dips. If I want a tasty treat, I have it with tortilla chips, but if I’m watching my carbs and calories, I’ll have it with raw veggie sticks – carrots being my all-time favorite. Guacamole is creamy, a little bit spicy, and surprisingly good for you. It’s loaded with healthy monounsaturated fats and the addition of garlic and chili further boost its benefits.
Avocado is one of my 10 favorite superfoods.
Store-bought guacamole is often made with vegetable oil as well as too much added salt and sugar which you know as well as I do, are very unhealthy. This easy recipe is much better, and once you try it I’m sure you’ll love it to!
Ingredients – makes four servings:
- 3 small ripe avocado (chopped)
- 1 garlic clove – crushed
- 2 tablespoons fresh coriander
- 4 tablespoons plain yogurt
- Juice of a lime
- ½ chili (optional)
- Sea salt & black pepper to taste
Method:
Place all the ingredients in a deep bowl. Using your immersion blender, whizz them up until you form a smooth paste free from lumps. This should take 20-30 seconds. Put the ingredients into four individual ramekins and then serve or chill as required. This recipe is fine to store for 24 hours but is best consumed fresh.
