Summer is an awesome time for breaking out your grill, firing up the coals, and enjoying a barbeque. Most people like to barbeque meat, chicken or fish but some of my friends are vegetarians so I always make sure I have some of these meat-free burgers for them to enjoy. Not only are these veggie-friendly, they also contain superfood powder so they are very healthy!
Ingredients – makes four burgers
- 1 15oz can black beans
- ½ cup all-purpose flour or gluten-free flour
- 1 medium onion, finely chopped
- ¼ teaspoon pepper
- ½ teaspoon salt
- ¼ teaspoon chili powder
- 1 egg
- 1 scoop superfood powder, I use Amazing Grass Green SuperFood Original. Why is my favorite explained here.
- 1-2 tablespoons avocado or coconut oil
- 2 hamburger buns or rolls
Method:
Pour the black beans into a strainer to drain off most of the liquid. Place the beans into a medium sized bowl and mash with a fork. Add the flour, onion, white pepper, salt, chili powder, egg and superfood powder and then mix well until all the ingredients are thoroughly blended.
Create four burgers remembering that they will not shrink like meat when you cook them so the size you start out with will be the size you end up with.
Heat a large frying pan and add 1-2 tablespoons of avocado or coconut oil. Put the burgers into the pan and cook for about 5 minutes on each side until browned but not burnt. Alternatively, toss them on your barbeque grill. Place the burgers on top of half a hamburger bun, followed by your preferred toppings e.g. sliced tomato, lettuce, sliced avocado, or cheese. Enjoy with a cold beer or other chilled beverage of your choice.
