A few years ago, I offered to cook Thanksgiving dinner for my family and friends. I planned the menu carefully and bought everything in advance so I was perfectly prepared. I got up early, prepped all the ingredients, and got to work. Everything was going super-smoothly!
However, that all changed when my first guest arrived and asked me “Hey Sarah, what’s for dessert?” Oh my – I had completely forgotten about making anything for dessert!
I quickly cracked open my laptop, typed in the few ingredients I could find in my kitchen cupboards and found the recipe I’m going to share with you today.
Luckily, we were planning to eat later, so I had time to put this pumpkin cake together and cook it while we ate and chatted. When dessert time rolled around, I served my emergency dessert with vanilla ice cream and it was a big hit. Who said great cooking hard to be hard?!
Preparation time – 5 minutes
Cooking time – 3 hours
Number of servings – 6-8
Ingredients
- 2 x 15-ounce cans of pumpkin puree
- 1 packet spiced cake mix
- 1 cup butter
- Whipping cream or ice cream to serve (optional)
Instructions
- Layer the pumpkin, spice cake mix, and butter into your slow cooker. Spread them out so they are even, but try not to compress the ingredients
- Cook on high for two hours
- Mix thoroughly and then cook on low for another hour
- Serve in bowls topped with cream or ice cream
