Pesto is a traditional Italian sauce that is usually used with pasta but can be used in lots of other ways too. Because it can be pre-prepared, pesto makes healthy eating very easy – just spoon pesto over your veggies or use as a sauce for grilled chicken and you’ve got a really tasty and healthy meal in minutes.
Homemade pesto is really easy to make and is so much better for you than store-bought pesto, which often included unhealthy oils and too much processing. Making your own is also cheaper. It’s really easy too when you use your food processor.
Ingredients
- 3 cups fresh basil leaves
- 4 cloves garlic – peeled
- ¾ cup Parmesan cheese – grated
- ½ cup olive oil
- ¼ cup pine nuts
- ½ cup chopped parsley
Method
Combine basil, garlic, Parmesan cheese, olive oil, parsley, and nuts in the bowl of a food processor. Put the lid on because the oil may splash up the sides of the bowl. Blend to a smooth paste – about one minute. Store in an airtight Mason jar for up to a week.
