Breakfast is arguably the most important meal of the day. If you start your day with a healthy breakfast, you won’t feel hungry during the morning and end up eating sugar snacks, and you’ll also be more focused and productive.
Unfortunately, most traditional breakfasts are not very healthy at all. Most cereals contain a lot of sugar, and even oatmeal can be a problem is you have a lactose or gluten intolerance. Baked goods like bagels and pastries are also a poor breakfast choice as they contain way too much fat, sugar and calories to be considered healthy.
I often start my day with a healthy, homemade juice, but sometimes I want something solid to eat instead. This recipe is very easy to make, very filling, and also contains essential vitamins, healthy fats, and protein, all of which can help speed up weight loss and fat burning.
Ditch the cereal, put down that Pop Tart, and try this healthy breakfast bake instead!
Prep time: 15 minutes
Cooking time: 30 minutes
Servings: 4
Ingredients
- 4 large mushrooms
- 8 tomatoes, halved
- 1 glove of garlic, thinly sliced
- 2 teaspoons olive oil
- 8 ounces fresh spinach
- 4 large eggs
Instructions
Heat your oven to 200 degrees C. Place the mushrooms, garlic, and tomatoes into four, small, over-proof dishes. Drizzle with oil, and season with a little salt and pepper. Bake for ten minutes.
Put the spinach in a sieve and wilt it by pouring a kettleful of boiling water over it. Allow to drain and then carefully squeeze out any excess water.
Next, put the spinach in the now hot bowls, using a spoon to make a depression in the middle of each one. Crack an egg into each space you have created, and then bake all four dishes until the eggs are set – normally 10 minutes or so.
