Vegetarian Slow Cooking Recipes

Slow cookers are ideal for cooking cheap cuts of meat and making them taste delicious. The long, slow cooking process breaks down the collagen fibers in meat so that it becomes tender and juicy. Chicken, beef, and pork all come out tasting fantastic when they are slow cooked. 

But, what if you are a vegetarian, vegan, or just prefer to eat meat-free meals from time to time? 

Well, you COULD leave out the meat and make your recipes as normal, but you’ll probably find that your food ends up being bland. You’ll also miss out on essential protein. 

Or, you could follow a standard slow cooker recipe but then add something like soya pieces, tofu, or textured vegetable protein. I’ve done this, and it can work but, sometimes, it can go terribly wrong too!

Instead, I think it’s best to follow some recipes that are designed to be meat-free from the very start. That way, you are more likely to end up with a meal to love. 

Vegetarian slow cooker meals are invariably high in vegetables, fiber, and vitamins and incredibly healthy. These are some of my favorites and, after trying them, I think you’ll like them too. I honestly believe that not having meat from time to time is a good thing and these recipes are an ideal way to try going meat-free.
