Tomato soup is an all-time classic that goes perfectly with a grilled cheese sandwich. Nourishing, nutritious, filling, but very low in calories, tomato soup is simply awesome! Tomatoes are packed with lycopene, a nutrient known for its’ antioxidant and cancer-fighting properties. As super-foods go, this tomato soup is hard to beat.
Ingredients – makes 8 servings
1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
1 stalk celery, chopped
Celery Bunch
2 cloves garlic, chopped
1 teaspoon chopped fresh thyme or parsley
1 28-ounce can whole peeled tomatoes, with juice
1 14-ounce can whole peeled tomatoes, with juice
4 cups vegetable broth
1/2 teaspoon salt
Freshly ground pepper to taste
Method
1. Heat butter and oil in a heavy pan over medium heat until the butter melts. Add onion and celery and cook while stirring occasionally until softened – around 4 to 6 minutes.
2. Add garlic and thyme (or parsley) and cook, stirring, for another minute.
3. Stir in canned tomatoes (with juice). Add broth; bring to a simmer over high heat. Reduce heat to maintain simmer and cook for 10 minutes.
4. Puree the soup in batches in a blender, the model I use and blenders under $200. Add salt and pepper to taste.
