    Sugar-free Quick chocolate sponge cake

    Most puddings and cakes contain lots of sugar and wheat which makes them doubly unhealthy. They also often require lots of baking experience to make them successfully. This cake is very low in sugar, completely gluten free and so easy to make a child could do it. A perfect dessert for your 20 no sugar days challenge. Eat warm with a couple of spoonful’s of low fat, sugar-free yogurt for a decadent but healthy dessert.

    Ingredients -Makes 2 servings

    2 free range organic eggs
    1 tablespoon organic Dutch process cocoa – unsweetened
    100 grams ground almonds
    1 teaspoon baking soda
    2 teaspoons stevia
    25 grams melted butter
    100 grams low fat plain Greek yogurt to serve

    Directions

    Whisk the melted butter and the eggs and then add the dry ingredients. Place in a microwaveable bowl on high for 3 minutes or until the mixture is springy on top. Alternatively, pour the mixture into two greased muffin tins and cook in a pre-heated 200-degree oven for 15 minutes. Serve hot and covered with the yogurt.

      These desserts say “low sugar”, not “no sugar”. How do you go on a no sugar detox, but still indulge in desserts that contain sugar?

      I say, just go all in. No sugar, no desserts. 21 days isn’t long to go in the big scheme of things. 🙂

        Hi Livia,

        Thanks for your comment. During a sugar detox yes you should avoid all the added sugar you can. Once you finished your 20 no-sugar days challenge you can enjoy some sweets and the idea of low sugar desserts is to create a new healthy habit of enjoying desserts without tons of sugar, like traditional desserts usually have.
