I know, some mornings even five minutes is too long to spend on breakfast but this breakfast is virtually instant and tastes great too! This recipe is high in protein, very low in carbs and takes no more than TWO minutes to make. Really, what was your excuse for skipping breakfast…?! And, even better, it’s virtually sugar-free which makes it ideal if you are following a sugar-free eating plan. Feel free to carb this meal up a little with a slice of whole grain toast or a piece of fruit on the side but I find the combination of protein and fat leaves me feeling full without these additions.

Ingredients for 2 servings:
- 3 eggs
- ½ cup pre-sliced fresh mushrooms
- 25 grams low fat shredded mozzarella
- ½ cup finely chopped fresh spinach
- 1 teaspoon olive oil
- 1 tablespoon finely chopped parsley
Method
Crack eggs into bowl and then whisk eggs to break yolks. Add the mushrooms, spinach and cheese. Oil a hot pan and then add the eggy mixture. Scramble until firm – usually about two minutes. Garnish with chopped parsley and chow down!
