I love goat cheese! Not only does it have a nice sharp taste, it’s also rich in calcium, protein, and contains probiotics. Combined with eggs in this awesome omelet, you have a perfect start to the day and one of my favorite breakfast recipes…
Ingredients – serves one
- 3 medium eggs, beaten
- 1 tablespoon chopped herbs, such as parsley, basil, or cilantro
- Sea salt and black pepper to taste
- 1 tablespoon butter
- 2 ounces fresh goat cheese
Directions
Whisk together the eggs, herbs, ½ teaspoon salt, and ⅛ teaspoon pepper. Melt the butter in a small non-stick skillet. Add the eggs and cook until just set, 3 to 4 minutes. Crumble the goat cheese over the eggs and fold in half. Cook until the cheese is melted, about 1 minute.
