    Gluten-free Pizza

    Pizza is a family dinnertime favorite but that oh-so-delicious base is made of very refined, high gluten flour. That means that, if you have a gluten intolerance, this delightful dinner is off the menu for you and your loved ones. But now, with this recipe I’ve found at bbc good food, you too can enjoy pizza. It tastes so good and is so much healthier than regular pizza that you’ll soon forget that it’s completely free from gluten!

    Ingredients – serves 2:

    • 7 ounces gluten-free flour – I always use this one available at amazon.com.
    • ½ teaspoon salt
    • 2 tablespoon olive oil
    • Small sachet fast-action dried yeast
    • 1 tablespoon chopped rosemary
    • 1 teaspoon ground black pepper
    • ½ cup warm water
    • 1 small jar tomato bruschetta topping
    • 5 ounces mozzarella, thickly sliced
    • ½ avocado, thickly sliced
    • 2 ounces fresh rocket leaves
    • 12 cherry tomatoes, halved
    • 4 slices Parma ham
    • 4 slices ham
    • 1 tablespoon olive oil
    • 1 tablespoon balsamic vinegar

    Directions:

    Preheat your oven to 220C/fan 200C/gas 7. In a food processor, combine the flour, salt, olive oil, yeast, rosemary and pepper. Repeatedly pulse until mixed. With the food processor still running, add a little water to form a soft but not too sticky dough. Turn the dough out onto a clean work surface and then knead into a good, easy to handle, dough.

    Separate the dough into two halves. Roll out each half onto lightly oiled baking sheets. Make sure the dough is thin and around 10 inches around. Cover each round with tomato topping, right up to the edge. Leave to prove for about 15 minutes. Place in a hot oven for 12-15 minutes or until the dough lightly browned and crisp.

    Place each pizza base onto a plate and add the toppings. Serve immediately while still warm. By all means add different toppings to create your own pizza masterpieces!
