As well as being one of my favorite singers, meatloaf is one of my favorite dinners too! It’s filling, satisfying, and yummy, and all that protein makes sure I feel full for hours. I also like to use leftover meatloaf for my sandwiches or with a salad. In fact, I sometimes think that next day meatloaf tastes even better than fresh meatloaf!
Most meatloaf variations contain breadcrumbs, and bread contains gluten. This recipe uses gluten-free crackers which makes it taste every bit as good but without that pesky gluten.
Try it next time you are making dinner for your family and serve with mashed potatoes. I know you will LOVE this recipe.
Ingredients
- 2 lb. ground beef – use extra lean if you want to reduce the fat content
- 2 large eggs
- 1 cup gluten-free crackers, crumbled
- 1 medium white onion, chopped
- 1 cup gluten-free, organic Worcestershire sauce
- 1 cup organic ketchup
Method
Preheat your oven to 400F / 200C
Mix all the ingredients except the ketchup in a large mixing bowl until they are thoroughly blended. Add a little water or milk if your mixture is too dry. Add more crackers if it’s too wet.
Turn the meat mixture out into an oiled or lined 9x5x3-inch loaf pan. Press down and smooth the top.
Bake in the pre-heated oven for half an hour. After that time, carefully remove pan and pour off excess fat. Slather on the ketchup, return to oven, and cook for a further 30 minutes. Carefully pour off excess fat and serve warm.
