Thai Chicken Slow Cooker Hot Pot

Many people mistakenly think that eating healthily and for weight loss means that your meals must be bland and boring. In fact, it’s eating boring food that puts many people off their diet. I think that food should be one of life’s pleasures – even if you are trying to lose weight – and your meals should be something you look forward to rather than dread.

This recipe is tasty, healthy, and very easy to make which, in my opinion, makes it perfect for weight loss purposes.

The next time you find yourself dreading yet another boring weight loss meal, take this recipe out for a spin; it’s awesome!

Preparation time: 10 minutes
Cooking time: 8 hours
Servings: serves six

Ingredients 

  • 8 skinless chicken thigh
  • 16 oz. roasted tomato salsa
  • 4 tablespoon natural peanut butter
  • 2 tablespoons concentrated lime juice
  • ½ cup frozen peas
  • 1 tablespoon soy sauce
  • 1 oz. fresh ginger root
  • 6 oz. uncooked, parboiled white rice
  • 4 tablespoon chopped peanuts
  • 1 sprig fresh cilantro

Method 

Place chicken in crock pot. Combine all ingredients except for rice, peanuts and cilantro, and pour over the chicken. Cook on Low for 8 hours or High for 4 hours.

Cook the rice as normal and then serve the chicken on a bed of rice topped with the peanuts and cilantro.
