Mmmm – ribs! Ribs are a great family meal and they’re fun to eat. Served with baked potatoes and a large salad they are pretty healthy too. The trouble is, ribs are normally cooked on the barbeque and that’s not always practical. You also need to be a pretty good chef to make sure your ribs are tender but not overcooked.
For me, the best way to cook ribs is in a slow cooker. Slow cooked ribs come out perfect almost every single time. My family and friends love when it’s rib night! Try this easy recipe for yourself – I know you’ll love it too.
Serves four
Preparation time: 10 minutes
Cooking time: 8-9 hours

Ingredients
- 3 lbs. meaty pork ribs
- 1 bottle barbecue sauce
- 2 beef stock cubes
- 2 bay leaves
- 1 teaspoon coriander seeds
- 1 teaspoon mustard seeds
- 1 teaspoon peppercorns
Method
Put four tablespoons of barbecue sauce along with the other ingredients into your slow cooker. Top up with enough water to cover the ribs and cook on Low for 8 – 9 hours until very tender.
Then, heat your oven to 400 degrees Fahrenheit. Remove the ribs from the slow cooker using tongs, put them in a lined baking tray and baste them with the remaining barbecue sauce. Cook in the oven for 20 to 30 mins until they start to crisp.
