    Roasts come out great in slow cookers. The long, slow cooking process means that even the toughest joint of meat turns into a tender delicacy. Sometimes, when you cook small roasts, it’s hard to get the cooking time right, and the meat ends up overdone, dry, and tough. But if you have a 2-quart slow cooker, it’s easy because cooking the meat slowly means it always comes out moist and tender.

    I’ve found this recipe at the amazing blog BBC Good Food. This recipe is really easy, and you’ll probably have a little meat left over for sandwiches or a salad for tomorrow. If you love beef, you’ll love this recipe!

    Preparation time: 15 minutes
    Cooking time: 7 hours 30 minutes
    Servings: 2

    Ingredients 

    • 1 lb. rolled beef brisket
    • 1 tablespoon plain flour
    • 1 tablespoon sunflower oil
    • 1 carrot, chopped
    • 1 stick of celery, chopped
    • 1 small parsnips, chopped
    • 1 small onion, chopped
    • 1 garlic cloves, crushed
    • 1 small glass red wine
    • ¼ pint beef stock
    • 6 button mushrooms, sliced
    • 1 bay leaf
    • 2 teaspoon English mustard

    Method 

    Turn your slow cooker to Low and leave it to heat up. When ready, add the vegetables. Next, heat the oil in a frying pan and roll the beef in the flour. Season to taste with salt and pepper. Brown the beef all over and then position it on top of the vegetables. Add the bay leaf, garlic, and mustard, and then cover with the wine and stock. Replace the lid on and cook for 7 hours.

    After that time, heat your oven to 380F and carefully remove the beef from the slow cooker. Place it on an oiled baking tray. Roast in the pre-heated oven for 20 minutes.

    While the beef browns, spoon the cooking liquid from the slow cooker and into a shallow pan. Boil rapidly to make a rich gravy. Use an immersion blender to make your gravy smooth and free from lumps.
