I love pancakes! There, I said it! For me, pancakes are the ultimate, decadent breakfast treat. I KNOW they aren’t healthy but, when I’m at a diner, it’s my favorite breakfast food. I only have them as an occasional treat because, after all, healthy eating is what I’m all about but, sometimes, I have huge cravings breakfast pancakes!
Thankfully, I have found a way to make my unhealthy breakfast much better for me, and I want to share that recipe with you. Unlike most pancakes, this version contains lots of protein and, best of all, it’s ready in minutes because you make the batter in your blender.
For me, pancakes are a wonderful weekend treat. These might not be your regular pancakes but, trust, me, they are every bit as tasty!
Ingredients – serves one:
½ teaspoon baking powder
½ teaspoon cinnamon
½ cup unsweetened applesauce
1 large egg or 2 egg whites
¼ cup vanilla nonfat Greek yogurt
½ teaspoon pure vanilla extract
Heat a small frying pan or skillet over medium heat and coat it with cooking spray. Add all ingredients to your blender and then blend on high until smooth, usually around 30-45 seconds. Why I spent $484 on my blender ? My answer and my recommendations for blenders under $200.
Pour ¼ the batter into your pan and cook until the edges begin to look dry and bubbles start to appear on the top of the pancake. Using a spatula, flip your pancake and cook for a couple more minutes on the other side. Repeat with remaining batter, remembering to coat your skillet again with oil between each batch.
The number of pancakes you get from this recipe will depend on the size of your pan and how much batter you pour in each time. Feel free to make smaller and more, or larger and fewer pancakes although smaller pancakes are easier to flip!
Serve with your favorite toppings and enjoy! I love mine with sliced banana and real maple syrup.
